Setting Goals & Planning For The Last Minute (Quick One Pot Pasta Meal Recipe)

Happy New Year! Welcome to 2023! I am excited about this year! As you go throughout this year, make sure you stay focused on what God has promised you. Make sure you stay focused on your goals . One of the things that keep people from fulfilling their goals are the distractions that unexpected interruptions bring. For example, if you plan to eat healthier, cut calories, or eat differently – most likely you will prepare ahead of time for those meals. However, what happens if something throws you off your plan? What if the interruption takes all the time you have to prepare the healthy meal? Since your plan didn’t work out, will you just order a pizza, eat a bag a chips, and down a soft drink? No! You have to plan for interruptions and the last minute. In my fitness journey, I learned that I needed to have back-up meal plans and snacks so that I can be successful in my journey. I stock up on my back-up snacks and meals because by being a husband, dad, and pastor I have learned that interruptions are a part of my life. On the blog this month, I want to share with you some of my back-up (last minute) meals that have worked for me. Take a look at my last-minute one pot pasta recipe below.

Last-Minute One Pot Pasta

Do you know one of the things I really appreciate about one pot pasta? It’s in one pot! It saves the extra time of boiling the pasta and separately preparing the different ingredients. When it comes to pasta, I have have switched out most of my pasta for pasta made from chickpeas. Banza is currently my favorite chickpea pasta. Depending on the pasta you use, you will want to adjust the length of how long you cook the pasta.

16 oz of pasta (Pick your favorite healthy option and style)

8 oz of Greenwise (Publix) Alfredo Sauce (I prefer this option because it is alfredo sauce that doesn’t use egg.)

14.5 oz can of diced tomatoes

4 oz of frozen spinach

2 oz of sliced almonds

2 tbsp spoons of grapeseed oil

Add garlic powder, oregano, basil, red pepper flakes, and pepper to taste. (I personally add a few dashes of Tabasco sauce as well. I really like spicy food.)

Add 5-6 cups of water (This is just enough water to cover your mixture.)

Stir your mixture and bring the pot to a boil over high heat. Stir and reduce temperature to low to medium. You’ll need to cook your pasta for 8-10 minutes depending on your pasta choice and your pasta texture preference. Your goal in the cooking length is the evaporation of the water and achieving your desired pasta texture. You should stir your pot every two minutes while it cooks. Your last minute pasta is ready to serve! Add parmesan cheese and enjoy!
