Goals, Leftovers, & Taco Tuesday
Happy Tuesday! It’s Taco Tuesday, at least for my house it is. Every Tuesday, I create a taco spread for my family’s dinner. One of my children called it our weekly family holiday. When my wife and I cook, we cook with leftovers in mind. We endeavor to create meals that are healthy and enjoyable for multiple days. Over the last few years, we have been focused on creating a life and rhythm that enables our family of six to live purposefully and joyfully.
What if you could re-create your life? What type of life would you live? These are questions that I asked my congregation on Sunday and I asked them to re-set their goals for 2023. It’s actually possible to re-create your life and live a life you enjoy. You should listen to Sunday’s message because you may be a person that needs to re-set their 2023 goals as well.
In creating this taco spread, I looked for different staples for the meal. I also slightly change it every week to add variety to our family tradition. My wife really likes the refried beans that we get at Mexican restaurants. I decided that should be one of our weekly staples. (I’ll share the quick recipe with you below.)
If you are going to purposefully create, you need to set goals. My purpose with Taco Tuesday is to create a family time and meal that we enjoy and also allows us to have leftovers. What type of regular family tradition will you create? Do you already have one? If you don’t, I encourage you to start one. What you create will help you create a life that you and your family enjoy.
Our Taco Tuesday Refried Beans
Ingredients
2 14oz cans of refried beans (We prefer to use organic and vegetarian.)
2 tsbp of sour cream
1/2 cup of milk
1 cup of shredded Mexican cheese
1 tsbp of taco seasoning
Add the two cans of refried beans to a medium pot. Place your pot on the stove and cook on medium heat. Add the milk and sour cream to the pot. Stir the mixture until it is smooth. Add the taco seasoning and stir again. Occasionally stir while you allow the mixture to cook until the refried bean mixture begins to boil. Once the beans begin to boil, add a 1/2 cup of the Mexican cheese. Stir and allow the cheese to melt and combine with the mixture. Pour the refried beans into the serving dish and top with the rest of the Mexican cheese. Your refried beans are ready to serve! Enjoy!
